Classic cool-climate Chardonnay from Chablis in Northern Burgundy. Pale lemon with green flashes and a few legs. Delicate aromas of acacia blossom, Coxes apples and Conference pear interlaced with smoky minerality. Crisp and dry with uplifting citrus acidity which gives freshness. Crystal clear and light-bodied with a vein of pure minerality running though it which lends a salty edge to the wine. Elegant and restrained with very good length, lingering well after the last drop. Drinking well now while it is crisp and fresh.
Great with shellfish such as oysters and mussels, or seafood like Plaice Mornay or Dover Sole. Also good paired with soft cheese like young Brie or Camembert, Chaource or Coeurs de Coupigny.
